ABSTRACT
Cultivated meat offers a sustainable alternative to conventional livestock production, but its commercialization remains constrained by high production costs, reliance on animal-derived culture media, and difficulties in achieving the desired texture and sensory quality. Composite cultivated
meat systems incorporating crop-derived materials offer a scalable solution. This review examines crop-derived scaffolds and culture media supplements
for these systems. Crop proteins, polysaccharides, matrices, peptides, carbohydrates, minerals, and phytochemicals support cell attachment, tissue formation, and growth while reducing serum dependence. Key processing technologies, such as extrusion, gelation, 3D printing, and freeze-drying,
are also highlighted. Finally, major research gaps include standardized material selection, cell-specific optimization, storage and processing evaluation,
and greater use of cultivar diversity.

			<title><![CDATA[Lee et al. (2026) Potential of dry-aged beef crust hydrolysate as a novel salt replacer in low-sodium sausgages]]></title>

			<description><![CDATA[Abstract

NaCl is essential for human physiology, but excessive intake is linked to various health problems, including
hypertension and cardiovascular disease. Thus, reducing NaCl in processed meats is increasingly demanded;
however, NaCl is critical for key quality attributes (e.g., water-holding capacity and texture) and its characteristic
flavor, creating a challenge to lower sodium without compromising product quality. Here, dry-aged beef crust
was enzymatically hydrolyzed to develop a natural salt replacer for low-sodium sausages, and optimal conditions
were explored by protease type (Flavourzyme, Protamex, and Neutrase, used individually or in combination) and
reaction time. The hydrolysate treated by Flavourzyme (for 180 min) showed strong saltiness and weak bitter
ness in sensory and electronic-tongue analyses with high contents of taste-active metabolites. Replacing 17–33%
of NaCl in sausages maintained color, water-holding capacity, texture, and saltiness while reducing bitterness.
These findings support dry-aged beef crust hydrolysate as a natural NaCl replacer for low-sodium meat products]]></description>

Meat has played a central role in human evolution, shaping not only our diets but also our societies, cultures, and technolo
gies. From early hunting practice to the domestication and systematic production of livestock, the history of meat produc
tion closely parallels human development. Today, however, industrial meat production faces growing challenges, including
environmental sustainability, resource efficiency, ethical concerns, and evolving consumer expectations. In this review, the
transformation of meat production is discussed, with a focus on emerging scientific and technological innovations aimed
at improving meat quality, sustainability, and production efficiency. In addition, the concept of cellular agriculture is sum
marized as a complementary approach for producing future agricultural products, including protein sources, along with
conventional meat production and other meat alternative technologies. The future of meat is not merely a technological
challenge, but a multidisciplinary endeavor, as the market introduction of cell-based foods, a key component of cellular
agriculture, broadens the meat science landscape and enables innovation to advance alongside conventional meat produc
tion in support of sustainable and resilient food systems.]]></description>

21세기는 변동성(Volatility)・불확실성(Uncertainty)・복잡성(Complexity)・모호성(Ambiguity)이 일상이 된, 이른바 VUCA 시대다. 경쟁은 치열해졌고 사회는 갈등과 양극화 속에서 쉽게 나뉜다. 『가축들』은 이런 혼란의 시대에 짐을 나르는 가축에서 이야기를 시작해, 인간의 삶과 문명의 방향을 다시 묻는다.
인류는 오래전부터 동물과 함께 살아왔다. 말과 당나귀, 소와 낙타, 순록처럼 짐을 나른 가축들은 인간이 혼자서는 감당할 수 없던 무게를 대신 짊어졌고, 그 덕분에 인간은 더 멀리 이동하고 교역과 문화를 넓혀갈 수 있었다. 문명은 늘 짐을 어떻게 나누어 지느냐와 함께 발전해왔다.
이 책은 가축의 가축화 과정을 따라가며, 경쟁과 폭력의 역사 뒤에 가려진 협력과 인내의 가치를 조명한다. 또한 인간의 본성은 타고난 것이 아니라, 어떤 환경에서 누구와 함께 살아왔는지에 따라 만들어진다는 점을 보여준다. 
신화와 기록, 우화와 과학적 연구를 함께 엮어 가축과 인간의 관계를 입체적으로 바라보는 점이 이 책의 특징이다. 가축의 이야기를 통해, 혼자 버티는 삶이 아니라 함께 짐을 나누며 살아온 인간 사회의 오래된 방식을 문화인류학의 시선으로 풀어낸다.]]></description>
